Tiroler Speckknödel (Tyrolean bacon dumplings)

Optimal, um trockenes Brot zu verwerten aber dabei sooooo lecker.

200g Weißbrot oder Toast, sowie 50g Bauernbrot in Würfel schneiden. Mit 125ml heißer Milch übergießen und ziehen lassen.

Derweil 100g Tiroler Speck und 1 kleine Zwiebel fein würfeln. Zwiebeln in etwas Butter glasig andünsten, dann Speck dazu geben und kurz mit braten.

Speck und Zwiebel zum Brot geben und alles vermischen.

2 Eier, 2 EL gehackte Petersilie und 1 Prise Salz dazu geben. Alles mit den Händen rasch zu einer formbaren Masse verkneten. Ist die Masse noch sehr weich, etwas Paniermehl unterkneten.

Masse mindestens 15 Minuten ruhen lassen, dann 8 kleine Knödel formen. In kochender Brühe etwa 8 Minuten garen, etwas Schnittlauch und Petersilie dazu geben und mit der Brühe servieren.

Cut 200g/7oz white bread or toast, as well as 50g/1,8oz brown bread into cubes. Cover with 125ml/4,2fl oz hot milk and leave to soak.

Meanwhile dice 100g/3,5oz of (Tyrolean) bacon and 1 small onion finely. Sauté the onions in a little butter, then add the bacon and fry on for a short time.

Add the bacon and onion to the bread and mix it.

Add 2 eggs, 2 tbsp chopped parsley and 1 pinch of salt. Knead everything quickly with your hands to a formable mass. If the mass is still very soft, knead in some breadcrumbs.

Let it rest for at least 15 minutes, then make 8 small dumplings. Cook in boiling broth for about 8 minutes, add some chives and parsley and serve with the broth.
